Cheery Chia Cupcakes
You can’t be good all the time, or can you? These delicious cakes have a handful of Chia seeds, a superfood with more omega-3 fatty acids than salmon, a wealth of antioxidants and minerals and a complete source of protein. What’s more, Chia keeps its nutritional value when cooked. Simply add a tablespoon of the seed next time you make cakes and for added health benefits, swap the sugar for agave nectar and use wholemeal self-raising flour. Perfect for kids’ lunchboxes and tea-time treats.
Ingredients
Makes 12 cakes
125g butter (soft)
125g caster sugar
2 eggs
125g self-raising flour
Tablespoon of lemon juice
Tablespoon of Chia seeds
Steps
- Cream butter and sugar until fluffy
- Beat in eggs a little at a time
- Fold in flour and add the lemon juice & Chia seeds
- Spoon mixture into cake cases
- Pop in oven at 190° for 10-15 mins
